VERY STRAWBERRY SHORTCAKES 
2 1/2 c. sliced strawberries
1 tbsp. sugar
1 1/2 c. flour
1/2 c. oat bran
3 tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
2/3 c. milk
3 tbsp. vegetable oil
2 c. whipping cream, whipped in chilled bowl & add 2-3 tbsp. sugar

Combine strawberries and 1 tablespoon sugar; mix well and chill. Heat oven to 375 degrees. Grease cookie sheet. Combine flour, oat bran, 3 tablespoons sugar, baking powder and salt; mix well. Add combined milk and oil, stirring with fork until mixture leaves sides of bowl and forms a ball.

Drop six 3 inch dough balls onto prepared cookie sheet. (I always pat them down a little.) Bake 20-22 minutes or until light golden brown. Cool 1 minute on cookie sheet. Remove to wire rack. Cool completely. Split each shortcake in half. Layer with strawberries, cream, top half more berries, more cream. Makes 6 servings.
