Dad's Banana Pancakes

This recipe seems deceptively simple. All the other banana-Bisquick pancake recipes call for sugar, honey, baking powder, and other ingredients. I was trepidatious about all the extra liquid (1 egg, bananas) but these were PERFECT.

I love this recipe. So simple, no added sugar. They take longer to cook, which can over brown the first side, so I turned the heat down just below medium, and put a lid on the pan for cooking teh first side.

Delicious! I added chia seed, 1/4 cup brown sugar, cinnamon and some crushed nuts to dry ingredients. I added almond extract to the wet ingredients. So yummy!!

They were delicious, but a bit doughy. Next time, Clark says he'll separate the eggs, as suggested.

These pancakes are fantastic!! Super easy too! I didn't bother dividing the eggs - just added them whole to the well mashed bananas. I also added fresh blueberries! YUMMM!!!

These are indeed the best pancakes I have had ever made! I added a few banana clumps into the mix and added just a little more sugar...they are so good that no syrup is needed!

Two tablespoons of sugar with this, splash of vanilla, and two tablespoons of cocoa powder, and chocolate banana pancakes made everyone smile

I loved this recipe! It was easy enough for my 13 year old daughter to make. They were kind of thin, but nice and light. This made enough for four people, so any less and you'll want to cut down on the recipe. Over all, this one's a keeper!

Only question is... why not just 3 eggs?? 3 egg yolks 3 egg whites = 3 whole eggs right???? If you beat it well enough the consistency should turn out the same. Looks like a great recipe though and I will try it today!
