HEALTHY BANANA PANCAKES 
Gluten, dairy + grain free.

2 bananas
3 eggs
1 tsp. cinnamon
pinch of salt
pinch of cayenne pepper
2 tbsp. coconut oil

SUGGESTED TOPPINGS:

dates
oranges
honey
flax seeds

Mash bananas in a medium sized bowl until smooth. Add eggs, mixing well after each addition. Mix in cinnamon, salt, and cayenne pepper.

Heat a small saucepan on medium heat. Pour half of oil into saucepan, let melt and swirl around pan. Add half of batter. Cover with lid. Carefully flip pancake when bubbles appear all the way to center. Brown second side, and serve! Repeat with remaining batter.

Serve topped with pitted dates, supremed oranges (peeled and cut into segments), honey and flax seeds.
