BANANA PANCAKES 
2 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
2 tbsp. white sugar
2 ripe bananas
1 egg
1 tsp. vanilla extract
2 cups milk
3 tbsp. vegetable oil

Mash two bananas in large mixing bowl. Add egg, vanilla, milk and oil and mix until combined.

In a separate bowl add flour, baking soda, salt, and sugar and stir or sift until combined. Slowly add dry ingredients to large mixing bowl wet ingredients and stir until mixed thoroughly.

Cook pancakes over a hot griddle or pan until both sides are golden brown.

These were the perfect way to use up those overripe bananas! Super easy to whip up and tasted even better than regular pancakes. My picky eater even went back for seconds - that's always a win in my book! Will definitely be making these again!
