HOLIDAY POTATO PUFF 
8 oz. cream cheese
4 c. hot mashed potatoes, about 12
1 egg, beaten
1/3 c. minced onion, Durkee instant
1 tsp. salt
1/16 tsp. white pepper

Beat cream cheese until fluffy. Add potatoes and beat until thoroughly blended and fluffy. Add egg, onion, salt, and pepper and mix well. Spoon into a lightly buttered one quart casserole. Bake in a preheated oven at 325 degrees for one hour.

Recipe can be doubled and made the night before. If made the night before allow extra baking time for the coldness of the potatoes. When making the 4 cups mashed potatoes just make as usual but take into account the extra salt and pepper added.
