L.'S POTATO LATKES 
10 med. potatoes
2 onions
2 lg. eggs
1/4 c. Matzah meal or unbleached flour
Salt & pepper
Note: Use white pepper

Run potatoes and onions through a food processor. Mix in eggs, matzah meal, salt and pepper to taste. Heat an inch of oil in a frying pan. Drop 1 tablespoon of mixture into skillet. Fry, turning once. When golden and crisp on each side, drain on paper towels. Serve with yogurt, sour cream, sprinkled with powdered sugar or spiced applesauce. Serves 8.
