EGGPLANT CASSEROLE 
2 lg. eggplants, peeled and sliced
2 eggs slightly beaten with a little milk
1 1/2 lbs. ground beef
1 onion
1 can tomatoes
1 can tomato sauce
1 pinch basil
1 tsp. thyme
2 tsp. sugar
Tony's Creole Seasoning Flour
1/2 to 1 lb. Cheddar cheese (depending on how you slice cheese)

Dip eggplant slices in egg and milk then seasoned flour. Brown in oil. Put aside. Brown ground beef and onions; drain. Add tomatoes, sauce and seasoning. Simmer 30 minutes. Alternate layers of eggplant and meat sauce and cheese in casserole dish. Bake 30 minutes at 350 degrees.
