EGGPLANT CASSEROLE 
2 med. size eggplants
1/2 c. ground sausage
1/2 c. corn flake crumbs
1/2 lb. ground beef
1 sm. onion, chopped
1 c. grated cheese
Salt & pepper to taste

Peel and remove seeds from eggplant, cut in 1" cubes, cook in boiling water; drain. Brown the meats together with chopped onion, salt and pepper. Drain mixture, add eggplant and 1/4 cup corn flake crumbs. Blend well. Pour into casserole, cover with a layer of grated cheese. Sprinkle the remaining corn flakes. Bake at 350 degrees for about 10 minutes. Serves 6.
