EGGPLANT CASSEROLE 
1 lg. or 2 sm. eggplants
1 lb. ground beef
1/2 c. rice
1/2 c. chopped onion
1/2 bell pepper, chopped
2 tbsp. butter
Salt and pepper to taste
1 - 1 1/2 c. shredded med. Cheddar cheese

(All these ingredients are mixed together in this casserole.)

Peel eggplant. Cut into cubes and boil until tender. Drain. Cook rice. Fry beef, onions, and bell pepper. Mash eggplant in casserole dish. Add all ingredients together and mix well. Bake in oven at 350 degrees for 1 hour. May sprinkle the top with more cheese or bread crumbs.
