TURKEY ORIENTAL SOUP 
1/2 c. rice, uncooked
7 c. turkey or chicken broth
2 c. cooked turkey, chopped
1 c. celery, diagonally sliced
2 med. carrots, cut into matchsticks
1 (14 oz.) can fancy mixed Chinese vegetables, drained and rinsed
1/2 c. green sliced onions, including tops
3 tbsp. soy sauce
2 tbsp. water or bouillon
1 1/2 tsp. cornstarch

Combine rice and broth, bring to a boil and cook 10 minutes. Add turkey, celery and carrots. Simmer for 5 minutes. Stir in the mixed vegetables and green onions. Blend soy sauce and bouillon with cornstarch; add to broth. Simmer until soup is clear and slightly thickened; stirring occasionally. Makes 6 servings.
