GERMAN POTATO SALAD 
3 lb. cold boiled potatoes
1/2 lb. bacon
1 medium onion
1 small onion
2 tbsp. cornstarch
3/4 c. sugar
1 tbsp. salt
3/4 c. vinegar
1 c. water
3 hard cooked eggs
pepper

Peel potatoes and slice them thin. Set aside. Cut bacon in squares, dice medium onion and fry both together until bacon is crisp. Remove bacon and drain on paper.

Add cornstarch, sugar, salt, vinegar, and water to bacon grease and onion mixture. Blend well and bring to a boil. Pour over potatoes. Peel and slice eggs; add to potatoes. Grate small onion over the salad and add crisp bacon bits. Sprinkle with pepper to taste. Serve warm.
