FRUIT COMPOTE | |
1 lg. can peach halves 1 lg. can pear halves 1 lg. can pineapple chunks 1 can mandarin oranges 1 (16 oz.) can mixed fruit or fruit cocktail Maraschino cherries for garnish Drain fruit and arrange in 7"x10" rectangular glass baking dish or similar serving dish. Alternate larger and smaller fruit in dish. Set aside. SAUCE: 1/4 c. butter 1/2 c. brown sugar 2 1/3 c. orange juice 3-4 tbsp. cornstarch 1/2 tsp. brandy or rum flavoring Dash cinnamon In small saucepan, melt butter and brown sugar together with dash of cinnamon. Combine in separate bowl or measuring cup the cold orange juice and cornstarch. Stir until cornstarch completely dissolved. Pour orange juice/cornstarch mixture into melted butter mixture, stirring constantly as it thickens. Cook only until the sauce thickens. Remove from heat and fold in brandy/rum flavoring. Pour warm sauce over fruit. Garnish with cherries in middle of pears and peaches. Just before serving, warm casserole in 325 degree oven for 15 minutes. (This can be made ahead and warmed just prior to serving.) This is pretty as a holiday side dish. |
