AIR FORCE FAVORITE CALYPSO SALAD 
SALAD:

1 lb. chicken, crab meat, turkey or tuna
1 c. green pepper, chopped
1 c. green grapes, seedless
1 (8 oz.) can water chestnuts, drained & sliced
1 (8 oz.) can pineapple chunks, drained
1 (2 oz.) jar pimentos, chopped & drained

DRESSING:

1 c. mayonnaise
1 tbsp. curry powder
1 tbsp. onion, minced
1 tbsp. soy sauce
1 tsp. catsup
1 tbsp. lemon juice
1/2 tsp. ginger, ground

TOPPING:

1 c. almonds, slivered & toasted

GARNISH: (optional):

Cantaloupe, thinly sliced
Avocado, sliced

Combine all salad ingredients. Combine all dressing ingredients. Toss salad and dressing together. Serve on lettuce leaves. Top with slivered almonds and garnish with cantaloupe and/or avocado. Serves 4.
