SQUASH CASSEROLE 
1 c. squash (cooked and drained)
1 c. grated cheese
2 eggs, beaten
1/2 c. milk (sweet or evaporated)
1 c. bread crumbs or Ritz crackers, crushed
1 sm. onion
1/2 tsp. pepper
1 tsp. salt

Save out 1/2 cup of cheese and 3/4 cup cracker crumbs. Mash squash and add onion, milk, eggs, salt, pepper, cheese and cracker crumbs. Pour into casserole dish that has been greased. Sprinkle remaining cheese and cracker crumbs on top of squash. Dot top with butter. Bake at 375 degrees for 35-40 minutes or until casserole begins to bubble.
