SQUASH CASSEROLE 
1 lb. squash, cooked
1 med. onion, chopped fine
1 egg, well beaten
8-10 Ritz crackers, finely crushed
Salt and pepper to taste

Drain squash and mash. Add onion, salt and pepper. Fold in lightly well beaten egg and Ritz crackers. Pour in lightly buttered casserole (4 1/2 quart).

TOPPING:

16-18 Ritz crackers, finely crushed
1/2 stick melted butter

Toss topping ingredients together and spoon on top of casserole mixture. Bake at 300-350 degrees for 20-25 minutes.
