YELLOW SQUASH CASSEROLE 
2 lbs. yellow squash (1 lg. quart)
1 egg
12 crushed Ritz crackers + 6 for top
1 c. shredded sharp cheese
1 tbsp. sugar
1 stick butter
1/2 tsp. salt

Slice squash. Cook until tender. Drain and mix in egg, add crackers, cheese, salt, sugar and 1/2 stick of butter. Mix well. Pour into casserole. Sprinkle on top with additional crackers browned in other 1/2 stick of butter. Bake at 325 degrees for 30 minutes.
