TAMALE PIE 
1 med. onion, chopped
1 clove garlic, minced
2 tbsp. peanut oil
1 1/2 lb. ground beef
1 1/2 c. tomatoes
2 tsp. salt
1/4 tsp. pepper
1 tsp. ground cumin
4 tsp. chili powder
Cornmeal mush
Shredded cheese

Saute onion and garlic in hot oil until browned. Add ground beef and cook until brown. Add tomatoes, salt, pepper and spices; simmer on low heat for 10 minutes. Remove and set aside. Follow package directions and mix 3 cups cornmeal mush. Line bottom and sides of a casserole dish with the cornmeal mixture, reserving about 1/3. Pour cooked meat filling into casserole. Spread remainder of cornmeal mixture over top of pie. Preheat oven and bake for 30 minutes at 425 degrees. Sprinkle with shredded cheese and serve hot.
