SPINACH MADELEINE 
2 pkg. frozen spinach
4 tbsp. butter
2 tbsp. flour
2 tbsp. chopped onion
1/2 c. evaporated milk
1/2 c. vegetable liqueur
3/4 tsp. celery salt
3/4 tsp. garlic salt
6 oz. roll jalapeno cheese
1 tsp. Worcestershire

Cook spinach according to package directions. Drain and reserve liqueur. Melt butter in saucepan over low heat. Add flour, stirring until blended and smooth. Add onions and cook until soft. Add liquid slowly, stirring constantly. Cook until smooth and thick, continue stirring. Add seasonings and cheese (which has been cut into pieces). Stir until melted.

Combine with cooked spinach. This may be served immediately or put into a casserole for next day. Top with bread crumbs. May be frozen.
