MOCK SPONGE CAKE 
1 1/4 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
3 eggs
3/4 c. sugar
1/3 c. hot water
1 tsp. vanilla
1/2 tsp. lemon flavoring

Sift together flour, baking powder and salt. Set aside. Beat eggs in small bowl until very thick and lemon colored (about 5 minutes). Pour into large bowl and beat in sugar gradually. Beat in on low speed hot water and flavorings. Quickly and thoroughly beat in dry ingredients. Immediately pour into prepared pan. Bake at 350 degrees for 25 to 30 minutes until top springs back when lightly touched.
