PINEAPPLE SPONGE CAKE 
3 egg yolks
1 1/2 c. sugar
2 c. flour
2 tsp. baking powder
Pinch of salt
1 c. hot water
1 tsp. vanilla
3 egg whites, beaten

ICING:

1/2 c. sugar
1 tbsp. flour
1 c. crushed pineapple

Preheat oven to 350 degrees. Cut wax paper circles to fit the bottom of 2 (9") cake pans. Mix ingredients in order given alternating the flour and water. Fold egg whites in last. Pour batter into pans, bake 20 minutes; cool.

ICING: Boil all ingredients (sugar, flour, pineapple) for 5 minutes or until thick and clear. Use between the layers and on top. Leave sides plain.
