ORANGE - GLAZED BEETS 
3/4 c. unsweetened orange juice
1 tbsp. cornstarch
1/2 tsp. grated orange rind
1/4 tsp. ground ginger
2 (16 oz.) cans sliced beets, drained

Combine first 4 ingredients in a medium nonstick skillet, stirring well. Bring to a boil over medium heat; cook 1 minute or until sauce thickens, stirring constantly. Add beets, and cook just until heated.

Makes 6 servings.
