APPLE CAKE 
2 c. flour
1 c. sugar
1/2 tsp. salt
1 c. butter
1 egg, slightly beaten
4 med. apples, sliced
1 tbsp. lemon juice
1 tsp. lemon rind
1/3 c. raisins
1/2 c. almonds, chopped

Mix flour, 1/4 cup of sugar and salt. Cut in 3/4 cup of butter until size of grains of cornmeal. Stir in egg until dough forms a ball. Gather together with fingers, if necessary. Knead together to form smooth dough. Chill.

Roll 2/3 of dough out on lightly floured board to make 11 inches round. Fit into a 9 inch round cake pan. Combine apple slices, lemon juice and rind, raisins and 1/2 of almonds. Fill pastry-lined pan with mixture.

Roll out remaining pastry and place on top of apples. Pinch edges together. Heat remaining butter, sugar and almonds together in a small saucepan slowly until butter melts and sugar dissolves. Spoon over top crust of cake. Place in 350 degree oven and bake for 45 to 50 minutes or until crust is golden brown. This is very delicious!
