VERY PUMPKIN - HONEY MUFFINS 
2 c. cooked, mashed pumpkin
2 eggs
1/2 c. oil
1 c. honey
1/2 tsp. baking soda
1/2 tsp. salt

Mix first 6 ingredients in blender. Pour into bowl.

3 c. flour
1 1/2 tbsp. baking powder

Sift together baking powder and flour; add to liquid and mix. Add raisins or nuts, if desired. Spoon into paper muffin cups, or well greased cupcake pans. Bake at 375 degrees for 20 minutes.

Makes 2 dozen.
