FRENCH FRIED SWEET POTATOES 
Select three or four sweet potatoes, wash, then parboil for about 10 minutes. Peel and cut into strips. Add 1 tablespoon sugar and 1 tablespoon salt. Heat deep fat to 370 degrees F. Fry the strips in hot fat until they are golden brown. Drain on absorbent paper. Serve at once.
