ROSY PLUM STREUSEL SQUARES | |
1 3/4 c. Quaker Oats (uncooked) 1 1/2 c. all-purpose flour 3/4 c. sugar 1 tsp. baking powder 3/4 c. (1 1/2 sticks) butter, melted 1/4 tsp. almond extract (optional) FILLING: 2 c. thinly sliced plums (about 3 to 4 med.) 2 tbsp. sugar 1 tbsp. all-purpose flour 1/3 c. raspberry preserves Heat oven to 375 degrees F. For crust and streusel, combine first four ingredients; mix well. Add combined butter and almond extract, mixing until moistened. Reserve 1 1/2 cups; set aside. Press remaining oat mixture onto bottom of 9x9 inch square baking pan. Bake 15 minutes. For filling, combine plums, sugar and flour. Stir in preserves. Spread on crust to within 1/2 inch of edge. Sprinkle with reserved oat mixture. Bake 25 to 28 minutes or until golden brown. 16 bars. |
