BLUEBERRY DAIQUIRI 
Makes an excellent 4th of July drink!

HOMEMADE BLUEBERRY SYRUP:

2 quarts fresh blueberries
10 cups sugar
1 (3 oz.) pkg. pectin
2 tbsp. lemon juice

Put blueberries in large pan. Cover with water. Bring to a boil, crush blueberries slightly. Boil for 30 minutes. Strain berries through a jelly cloth. Reserve at least 6 cups of juice.

Return juice to pan. Stir in sugar slowly, allow to dissolve, bring back to a boil. Add pectin, boil for 1 minute, stirring constantly, add lemon juice. Pour into container and reserve for use in daiquiri.

BLUEBERRY DAIQUIRI:

blueberry syrup
rum
crushed ice

Put crushed ice in blender, add rum (I usually use 3 full shots per blender). Mix well. Then add blueberry syrup. Blend.

Garnish each serving with fresh blueberries.
