FRUITY RED CABBAGE WITH BACON 
4 to 6 slices bacon
2 1/2 c. thinly sliced onion
1 red cabbage (2 1/2 to 3 lbs.) shredded
4 tart green apples, peeled, cored and thinly sliced
2 tbsp. brown sugar
3/4 tsp. salt
Pinch of pepper
1/4 tsp. cloves

In stove to oven casserole or dutch oven, cook bacon until crisp, remove. Add the sliced onion to the bacon fat and cook until the onion is golden, stirring occasionally and add the shredded cabbage. Put cover on casserole and simmer for 15 minutes. Add the remaining ingredients. Mixing in well, and bake, covered for about 1 1/2 hours in 325 degree oven. Delicious with pork.
