BRAISED LAMB SHANKS 
Buy 2 or 3 lamb s hanks. Have butcher cut them in two. Add salt, pepper and paprika. Dip in flour and brown in fat in Dutch oven. When nicely browned, add water and 2 or 3 small onions. Simmer until tender, 1 hour. When finished flour or cornstarch is added for gravy and served over mashed potatoes. (4-5 portions)
