OATMEAL BREAD WITH CARAWAY AND
DILL
 
1 1/4 c. boiling water
1 c. steel cut oats
1 env. yeast
1/4 c. water
Pinch of sugar
1 1/4 c. milk
3 tbsp. butter
3 tbsp. brown sugar
1 tsp. salt

Stir water and oats together and let cool to lukewarm. Proof yeast, water and sugar. Heat milk, butter, brown sugar and salt. Combine with oatmeal mixture. Add yeast mixture and: 1 tsp. dill

Beat in: 2 c. white flour

Knead in:

Knead 10 minutes. Transfer to buttered bowl. Cover. Rise until double. Punch down. Form into 2 loaves. Rise until double. Bake at 350 degrees for approximately 50 minutes.
