PUMPKIN CAKE | |
3 eggs 3 c. sugar 2/3 c. Crisco shortening 2/3 c. water 2 c. or 16 oz. can pumpkin 3 1/2 c. self-rising flour (or add 2 tsp. baking powder to all-purpose flour) 2 tbsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon, 1/2 tsp. ginger, 1/2 tsp. ground cloves (or 3 tsp. pumpkin spice) 1/4 tsp. nutmeg 2/3 c. nuts or raisins (optional) Put all ingredients in a large bowl in order listed. Stir until blended. Pour into 2 greased loaf pans. Bake at 350 degrees for 30 minutes or Bundt pan approximately 60 minutes or until brown on top. |
