PUMPKIN SPICE CAKE 
Vegetable cooking spray
2 eggs
2/3 c. sugar
3/4 c. mashed cooked pumpkin
1 tsp. vanilla extract
3/4 c. all purpose flour
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/8 tsp. pepper
1 tbsp. powdered sugar, sifted

Coat a 9 inch round cake pan with cooking spray; line bottom with wax paper., Coat wax paper with cooking spray; set aside. Beat eggs at high speed of an electric mixer 2 minutes. Add sugar, 1 tablespoon at a time, beating 2 additional minutes until thick and pale. Add pumpkin and vanilla; mix well.

Combine flour and next 6 ingredients in a bowl; stir well. Add to pumpkin mixture; stir well. Spoon batter into prepared pan; bake at 375 degrees for 20 minutes or until a wooden pick inserted in center comes out clean. Cool 5 minutes in pan on a wire rack; remove from pan and cool completely on a wire rack. Sprinkle powdered sugar over top of cake.

Makes 8 servings.
