PINEAPPLE ZUCCHINI BREAD | |
2 c. sugar 1 c. oil 3 eggs 2 c. grated unpeeled zucchini 3 c. flour 1 tsp. salt 1 tsp. baking soda 1/2 tsp. baking powder 3 tsp. vanilla 3/4 c. nuts 3/4 c. raisins or coconut 1 (8 oz.) can crushed pineapple, well drained Combine all ingredients and pour into lightly greased loaf pan. Bake at 325 degrees for 1 hour and 15 minutes. Yields 2 loaves. |
