MANGO RAISIN BREAD 
1 1/2 c. sugar
2 tsp. baking soda
2 c. flour
1/2 tsp. salt
2 tsp. cinnamon
3 eggs, lightly beaten
3/4 c. oil
1/2 c. chopped nuts (walnuts, pecans, or whatever)
2 c. mangoes, chopped
1 tbsp. lime juice
1/2 c. raisins

Can be purchased at Publix; cleaned, sliced, and fresh.

Sift together first 5 ingredients. Stir in eggs and oil. Add mango, nuts, lime juice, and raisins. Pour into 2 buttered loaf pans. Bake at 350 degrees for 1 hour. Can be made ahead and frozen.
