MANGO BREAD 
2 c. flour
1 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. sugar (3/4 c. white, 3/4 c. brown)
1/2 c. chopped nuts
2 c. finely chopped mangoes (about 3 med.)
1 tsp. vanilla
1/2c. salad oil
1 c. raisins
1/2 c. coconut
1/2 c. melted butter
3 eggs

Sift dry ingredients. Make a well in center and place other ingredients in; mix well. Pour into a greased loaf pan. Makes 2 small loaves baked at 350 degrees for 1 hour or 1 large loaf for 1 1/2 hours.

Variations: Substitute guava pulp, papaya or frozen strawberries, blueberries, or raspberries for mango. Frozen fruit must be thawed and drained.
