MANGO BREAD 
2 c. flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 1/2 c. sugar
3/4 c. oil
3 eggs, beaten
1 tsp. vanilla
2 1/2 c. diced mangoes
1/2 c. nuts
1/2 c. raisins
Optional: 1 c. crushed pineapple

Sift together flour, soda, salt, cinnamon and sugar in large bowl. Add oil, eggs and vanilla and mix well. Dump in mangoes, nuts, raisins and pineapple if desired. Mix well and pour into a greased and lightly flour dusted loaf pan. Bake at 350 degrees for 45 to 50 minutes.
