MANGO BREAD 
2 c. all-purpose flour, sifted
2 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
1 1/4 c. sugar
1 tsp. lemon juice
3/4 c. salad oil
3 lg. eggs
2 1/2 c. mangoes, chopped
1/2 c. raisins
1/2 c. nuts, chopped (optional)

If mangoes are not available, use 2 1/2 cups canned peaches, drained and chopped.

Preheat oven to 350 degrees. Combine all dry ingredients and mix well. Beat eggs with oil and add to dry ingredients, then add mangoes, lemon juice, raisins and nuts, if desired. Bake in 2 (2 pound) loaf pans for 45 to 60 minutes (check after 45 minutes) or until toothpick inserted comes out clean.
