ORANGE POPPYSEED MUFFINS 
1/3 c. butter, softened
1 c. sugar
1 1/3 c. all-purpose flour
1/2 tsp. salt
1/2 tsp. baking soda
1 tbsp. poppy seeds
1 egg
1/2 c. dairy sour cream
2 tbsp. grated orange peel
2 tbsp. orange juice

Preheat oven to 400 degrees. Cream butter and sugar. Stir dry ingredients together; add with remaining ingredients to creamed mixture, stirring until just blended. Bake for 17-20 minutes.

Substitute yogurt for sour cream to lower fat content.

Instead of orange peel and orange juice, mix in 2 tablespoons milk and 1 1/2 teaspoons lemon peel.
