APRICOT CHEESE DELIGHT 
1 (# 2 1/2) can apricot halves, drained and cut
1 (#2 1/2) can crushed pineapple
2 pkg. orange Jello
2 c. hot water
1 c. combined apricot and pineapple juice
3/4 c. miniature marshmallows

Drain and chill fruit. Keep juice. Dissolve Jello in boiling water. Add 1 cup fruit juice. Chill until slightly congealed. Fold in fruit and marshmallows. Refrigerate until solid. Spread Jello with topping below.

TOPPING:

1/2 c. sugar
3 tbsp. flour
1 egg, slightly beaten
1 c. combined apricot and pineapple juice
2 tbsp. butter
3/4 c. grated Cheddar cheese

Combine sugar, flour, blend in beaten egg. Gradually stir in juice. Cook over low heat until thick. Cool and fold in whipped cream. Spread over Jello. Sprinkle top with cheese.
