HOT VEGIE SALAD 
3 med. yellow squash sliced
3 med. onions, halved and sliced
3 med. zucchini, sliced
Italian seasoning
Olive oil
1/4 c. Parmesan cheese, grated
1/4 c. Monterey Jack cheese, grated

Preheat oven to 325 degrees. In large baking dish (do not grease) layer each of vegetables. Drizzling with olive oil, Parmesan cheese and Italian seasoning. Top with Monterey Jack cheese and remaining Parmesan cheese. Cover with foil and bake 30 minutes. Uncover last 10 minutes to brown top.
