ZUCCHINI CASSEROLE 
1 pkg. Italian sausage (hot or sweet)
1 onion, chopped
1 green pepper, chopped
3 sm. zucchini, sliced very thin
2 c. stewed tomatoes
8 oz. shredded cheddar cheese
8 oz. shredded Mozzarella cheese

Brown sausage, onion and pepper. Add sliced zucchini and cook until soft. Add stewed tomatoes and simmer until most of juice is gone. Put in 9x13 inch baking pan. Sprinkle with shredded cheddar and Mozzarella cheese. Put under broiler until cheese melts.
