ZUCCHINI OR EGGPLANT CASSEROLE 
2 lg. onions, sliced
3 lg. eggplant or 3 lg. zucchini
1 can (approx. 10 oz.) plum tomatoes
Salt & Pepper to taste
1 tsp. thyme
1 block Mozzarella cheese
1 tsp. garlic powder

Don't peel eggplant or zucchini. Coat pan with oil, put layer on bottom of onion, then tomatoes. Season with salt and pepper and add thyme and garlic powder. Cut zucchini or eggplant lengthwise. Layer on top of onion and layer of tomatoes on top of zucchini or eggplant. Cover with foil. Bake for 20 to 25 minutes at 350 degrees. Remove foil, place Mozzarella cheese on top without foil, bake for additional 10 minutes or until cheese melts.
