HANK'S ZUCCHINI CASSEROLE 
1 average zucchini
12 oz. tomato juice
1 onion
1 pkg. Mozzarella cheese
1 tsp. basil
1 tsp. oregano
1/2 c. whole wheat flour
Salt and pepper

Cut zucchini into bite-size pieces and place in a greased casserole dish. Chop onion and put over zucchini. In a separate bowl mix juice, salt and pepper to taste, basil, oregano and flour. Pour over zucchini. Place cheese over the top. Bake for 15-20 minute at 350 degrees.
