ZUCCHINI CASSEROLE 
6 zucchini
Salt, pepper
1/2 c. sliced onion
1/2 c. sliced celery
Oleo
2 tomatoes, peeled and sliced
Grated Mozzarella cheese
Dash dry mustard

Cut zucchini into 1/4 inch slices and overlap slices in layers in a well-greased casserole. Add salt and pepper to taste. Cook onion and celery in butter until tender.

Layer onion and celery over zucchini and add layer of tomato slices. Cover and bake at 350 degrees for about 45 minutes. Uncover and sprinkle with cheese mixed with mustard. Bake uncovered 15 minutes longer. Makes 6 servings.
