J. PAUL GETTY CARROT CAKE 
1 1/2 c. corn oil
2 c. sugar
4 eggs
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. vanilla
1 tsp. salt
2 c. grated carrots
1 c. chopped nuts
1/2 c. crushed pineapples, drained

Combine all ingredients into large bowl, mix until blended. Bake in 13 x 9 inch pan for 1 hour.

CREAM CHEESE FROSTING:

1 pkg. cream cheese (8 oz.)
1/2 c. butter
2 1/2 c. powdered sugar
1/4 c. crushed pineapples, drained
1/4 c. chopped nuts

Mix cream cheese, butter and powdered sugar until fluffy. Add pineapples and nuts; mix well.
