SQUASH CASSEROLE 
8 - 10 med. yellow squash
1/4 c. chopped onions
2 tsp. butter
1 egg, beaten slightly
Salt to taste
1/4 tsp. pepper
1 tsp. instant chicken bouillon
1/2 c. sour cream
1 c. cracker crumbs
1/2 c. parmesan cheese
1 c. grated cheese (of your choice)

Cook squash and onions until tender; drain well. Add butter, egg, salt, pepper, bouillon and sour cream. Mix well. Put 1/2 mixture in casserole. Mix bread crumbs and cheese together. Sprinkle 3/4 cup bread crumb mixture over squash. On top of this, sprinkle 1/2 cup grated cheese. Cover with remaining squash and bake at 350 degrees for 20 minutes. Remove from oven and top with remaining cracker mixture and top with remaining grated cheese. Return to oven and bake for an additional 10 minutes.
