SUMMER SQUASH CASSEROLE 
3 c. cubed summer squash
1/4 c. sour cream
1 tbsp. melted butter
1 tbsp. shredded cheese
1/2 tsp. salt
1/8 tsp. paprika
1 egg yolk, beaten
1 tbsp. chopped chives
2 tbsp. softened butter
1/2 c. grated Parmesan cheese
1/2 c. dry bread crumbs

Simmer squash until tender and drain. Combine sour cream, melted butter, cheese, salt and paprika. Stir mixture over low heat until cheese is melted.

Stir in egg yolk and chopped chives. Mix squash into mixture. Place mixture in buttered baking dish. Dot with butter, grated cheese and bread crumbs. Bake at 350 degrees until bubbly and brown, approximately 25-30 minutes. Serves 4.
