QUICHE (LOW CALORIE) | |
2 c. vegetables (cauliflower, broccoli, squash, mushrooms, pimento, celery, or others) 4 oz. chopped onion 1/2 c. chopped red and green sweet pepper 4 oz. grated cheese 1 c. skim milk 4 eggs 1 tsp. salt 1/8 tsp. pepper 4 tbsp. oil 4 tbsp. flour 1 tsp. baking powder Spray 9-inch pie plate with vegetable spray. Add drained vegetables. Sprinkle with onion, pepper and cheese. Place remaining ingredients in blender, whirl 15 seconds. Pour over vegetables and cheese. Bake at 375 degrees for 20 to 25 minutes, or until knife comes out clean. Let stand 5 minutes before cutting. Makes 4 servings. |
