COCONUT CREAM PIE 
1 1/2 c. scalded milk
2 eggs, separated
3 tbsp. cornstarch
1/2 c. sugar
Pinch salt
1 tsp. vanilla
1 tbsp. butter
1 c. coconut
1 baked pie shell

MERINGUE:

Whites from eggs
Pinch salt
1/4 c. sugar
1/2 tsp. vanilla

Mix dry ingredients - sugar, salt and cornstarch. Add scalded milk and cook over low heat until thick, stirring continuously. Stir in beaten egg yolks and cook about 1 minute or until egg is done. Remove from heat and add butter, vanilla and coconut. Pour into pie shell.

Beat egg whites about 1 minute. Add pinch of salt and 1/4 cup sugar. Continue beating and add 1/2 teaspoon vanilla. When thick spread over pie. Sprinkle meringue with a little coconut. Bake at 375 degrees until meringue is slightly brown. Approximately 10 minutes.
