COCONUT CREAM PIE 
1 c. sugar
2 c. milk
5 tbsp. cornstarch (level)
1/2 tsp. salt
1 tsp. vanilla
2 eggs

Blend sugar, cornstarch and salt together. Separate yolks from eggs. Mix milk and egg yolks and vanilla together. Put in double boiler and bring to a boil. Mix in sugar, cornstarch and salt that have been mixed. Cook until thick and well done. Beat until smooth, pour in 1/2 cup coconut. Stir and pour in baked pie shells. Beat egg whites for meringue.
