SUPER CARROT CAKE SUPREME 
4 eggs
2 c. flour
2 tsp. cinnamon
1 1/4 c. Wesson oil
3 c. grated carrots
2 c. sugar
2 tsp. baking soda
1 tsp. salt

Beat eggs, add sugar and beat well. Add oil and carrots and beat. Sift together the flour, soda, cinnamon and salt. Add to mixture and beat well. Pour into a 9 x 13 inch pan and bake at 325 degrees for 40-45 minutes.

ICING:

1 (8 oz.) cream cheese
1 stick butter (1/4 lb.)
2 c. powdered sugar
3/4 c. crushed walnuts (optional)
